Vinaigrette
Let's talk Scallion vinaigrette
Chef B.'s scallion vinaigrette
let's start:
6 bunches of scallions.
1.5lb chopped garlic.
2 bunches parsley
2Qt. Rice wine vinegar.
2Qt. Red wine vinegar.
1.5lbs chopped shallots.
1/8c. salt.
1/16c. Black pepper

1/2gal. canola oil
slice scallions, add remaining ingredients except canola oil
mix ingredients until smooth, add canola oil using a small mixer to incorporate. Add water if necessary to thin out adjust seasoning to taste.

This vinaigrett is the bomb. Life needs a kick so kick it up!

The rule is 3/1 3 parts oil 1 part vin. for 4ppl. I would use 1 shallot, 1 clove garlic,1tbl. parsley,1/4c vin split by 2, 3/4c oil and S&P to your liking.
I forget sometimes i'm not feeding 1000's. LOL

Are you ready for a challenge
Okay I'm just chef , and you are just who you are. So let's see what we can do together! I'm throwing down a challenge to myself so I'm giving myself six months to help as many people as I can. When you use this blog and my website. Justachef.com to get a revolution going. We are putting together a TV show. I hope this will help the word out that we need help each other and our children every child is everyone's responsibility. By teaching them to be good human beings showing them where food comes from, teaching them how to grow it, how to cook it. So through the TV show the blog the website and word-of-mouth I hope to get a revolution started. I would do everything in my power to get good food in our schools are children so they can grow strong and have been nutrients to learn what they need to to be productive members of our society. Cooking is something that we have to do each and every day of our lives. So don't you think something you need to do each and every day of your life three or sometimes five times a day is something that you should learn how to do? Well, I do. Right now I'm talking with Fair Start to do a thing called guest chef night. Fair Start is a program that helps people that I've had some trouble in their life. This program teaches them the skills they need for everyday use as well as professional cooking skills. I hope to work out a night with the fair start people that me and my crew can come and help train these people. Not only is this a great program it will give my staff a great value to know they helped train someone to be a better cook and get a new start in life and just maybe one of these men or women might one day may be working by their side. So over the course of the next six months I challenge you to see what you can do to help those that need help. So keep me posted as I will keep you posted on what I'm doing. Just so you know , I'm using the new Dragon natural speaking software to do my typing for me. It's 12:40 AM 19 September 2010. I would not be writing all this by hand at this hour so with this software I can just let my mouth motor on. It doesn't get all the words right. I need to finish training it. So, if you see somethings that are not quite right just Know it's late when I post and I might not catch everything that it gets wrong. But I will tell you this, Dragon software is great! Six months from now we will see how we've done.

My mind and my goals
Okay, let’s start talking the truth. This website will be about the truth. We need to help each other so that are children and our future can be secured. We need to start helping each other. Why is it we worry about babies being born? But then forget about them, the moment they are born? I think technologies have brought us into the future. But, have made us disconnected as a people. It seems more information gets out there. The less we really know about, one other. So most of us now live in apartments. How many of your neighbors do you know? How many friends just, go out of your life? How many true friends do you have that you sit down with? Watch the game with? That you can tell your deepest secrets to? What I'm saying is, we don't get or take the time to get to know anyone. When you're standing in line at the checkout counter why don't we talk to each other? All you have to do is say hello. There would never be lonely people or children without families, and no wars. If we would just treat each other with respect and love just like the good book says and every other book, or scroll ever made has said.
So what I'm going to do is help all those children that the world has turned their backs on. As well all the kids that just needs that extra hand. So what we are doing now is making the cookbook that can help make this dream come true. We will take the profits driven by this cookbook to fund the school and restaurant for those children. So, we need to get the word out! I started a blog. It's called, just a chef. You can go to http.//justachef. Blogspot.com/.

It only takes one person to get a revolution started. I know some people might not see my views as the best way of doing things. But this is the only way I know how. Doing something is better than doing nothing. Help me get a revolution going!
